It's been forever since I've posted a slow cooker recipe. That's probably because our go-to slow cooker meal requires only two ingredients: chicken and a bottle of some sort of sauce (tikka masala, salsa, even spicy arrabiata).
I find it kind of silly to dedicate an entire post to that craziness! But good news—the wait has been worth it because this slow cooker sweet tortilla soup is one of my new favorite slow cooker recipes.
Don't you love a slow cooker soup that comes together easily and requires ingredients you normally have on hand? In fact, I tend to buy double of things so if there's a dinner emergency (preferably at least 4 hours before dinnertime when you're talking slow cookers), I can quickly throw something together.
I actually had every ingredient for this sweet tortilla soup except stewed tomatoes, but a couple text to my neighbors and a can was secured ... along with some extra cumin since mine was in short supply.
This slow cooker tortilla soup calls for one full cup of brown sugar (hence the "sweet" in "sweet tortilla soup"), so if you're trying to cut down on sugar or you're all about the savory all the time (we can still be friends), try using ¼ cup.
It should be enough to flavor the soup without making it too sweet. Did I mention this sweet tortilla soup is ready in only a couple hours?
Did I also mention I'm dying to upgrade my manual slow cooker to a programmable one? (Early Christmas present to myself maybe?)
While I'm not usually a fan of a slow cooker recipe that requires prep outside throwing everything in the Crock-Pot, browning the ground beef is far less work than cooking pasta or browning a roast. Plus it makes the house smell extra yummy.
You know what else is extra yummy? Serving this slow cooker sweet tortilla soup with cornbread. You could throw in a salad too, but I count the stewed tomatoes and tomato sauce as vegetables...
Don't forget the tortilla chips; they're so fun to dip in the soup!

Slow Cooker Sweet Tortilla Soup
Slow cooker sweet tortilla soup is slightly sweet, super family friendly and a cinch to make. That must be why it's extra delicious!
Ingredients
- 1 pound extra lean ground beef or turkey
- 2 tablespoons cumin
- 1 (8-ounces) can tomato sauce
- 1 (14.5-ounces) can stewed tomatoes
- 1 can red beans
- 1 can cannellini beans
- 1 can yellow corn
- ½ to 1 cup brown sugar
- Toppings: shredded cheese, diced avocado, tortilla strips, sour cream
Instructions
- Brown ground turkey or beef with cumin in a large skillet. Place in slow cooker and add tomato sauce, stewed tomatoes, beans, corn and brown sugar. Stir to combine.
- Cook on high for 2 to 3 hours or low for 4 to 6. Top with shredded cheese, avocado, etc. before serving.
