You did the skillet method wrong. In the same way you should do potstickers, coat the pan with the oil and put the dumplings in the pan. Then add about 1/4 water to the pan and cook on medium high heat while covered. When the water is absorbed/evaporated, turn the heat down to medium until the dumplings are just turning brown and starting to crisp. Your way makes the dough too sticky.
