As I recall . The dough was rolled out( don’t smash the dough) and each biscuit was cut making sure to flour the
cutter each time . This made the biscuits taller when baked. Also we didn’t butter them until after baking . Source: I used to make biscuits at Hardee’s in the 90’s.
