My friends, the holidays are HERE. For reals here. I'm planning my Thanksgiving menu (we are hosting at least 18 people) and feeling a bit overwhelmed. Anyone else in the same boat?

Believe it or not, putting together a holiday brunch can be pretty dang simple and a nice break from holiday shopping.
If you want to keep it simple AND impress guests, serve this make-ahead breakfast casserole (I prefer sausage but you can use diced ham or crumbled bacon) along with some fresh fruit, fresh juice (orange and guava are fun!), pastries (buy 'em, don't make 'em) and these delightful bite-size stuffed bagels.
The make-ahead breakfast casserole is super easy thanks to only a handful of ingredients (bread, eggs, milk, salt, dry mustard, sharp cheddar cheese and sausage) and unbelievable delicious. It may not look all fancy and gourmet, but no one is going to care because it's so. dang. good.
I always have seconds, and everyone to whom I've served it has had seconds. And thirds.

Easy Make-Ahead Breakfast Casserole
Pair this easy make-ahead breakfast casserole with some tasty sides like fresh fruit and bite-size pumpkin bagels for the perfect holiday brunch!
Ingredients
- 8 large eggs
- 2 ¼ cups milk
- 1 teaspoon salt
- 1 teaspoon dry mustard
- 6 slices white bread, cubed
- 1 pound regular ground pork sausage, cooked and crumbled
- 2 cups grated sharp cheddar cheese
Instructions
- Lightly grease a 9x13-inch pan with cooking spray; set aside.
- Whisk eggs and milk in a medium bowl. Add salt and mustard and whisk until thoroughly combined.
- Layer ingredients in pan in the following order: cubed bread, sausage, cheese and egg mixture. Tightly cover with aluminum foil and refrigerate overnight.
- Preheat oven to 350 degrees. Remove foil and bake for 45 minutes or until center is set. Allow to set for 3 to 5 minutes before serving.
