I wanted to call it a one-pan chicken dish but you do have to mix the topping in a separate bowl. But I still think of it has one pan since there's very little prep involved.
Okay, you also have to dice the chicken.
Guess it's more like a "one bowl, one cutting board, one pan" kind of chicken recipe. *sigh*

Easy Bruschetta Chicken Bake
Crazy weeknights call for quick dinners like this bruschetta chicken bake. Ready in about 30 minutes, this flavorful dish will become a family favorite!
Ingredients
- 1 (14.5-oz) can Italian-style diced tomatoes
- 2 cloves garlic, minced
- 1 (6-oz) package Stove Top Stuffing Mix for chicken
- ½ cup water
- 1 ½ pounds boneless, skinless chicken breast cut into bite-size pieces
- 1 teaspoon dried basil
- 2 cups shredded mozzarella or monterey jack cheese
Instructions
- Preheat oven to 400 degrees.
- Combine tomatoes, garlic, stuffing mix, and water in a medium bowl. Stir just until stuffing mix is moistened; set aside.
- Place chicken in a 9x13-inch baking dish and sprinkle with basil and cheese. Top with stuffing mixture.
- Bake 30 minutes or until chicken is cooked through.
