This 5-minute southwest BLT chicken salad makes for an easy weeknight recipe. It's perfect for warm summer days or any time you need to quickly throw together a yummy, family-friendly meal!
Don't get me wrong, I can make a fantastic salad from scratch. This best ever macaroni salad is one of my most popular recipes.
Of course, I'm a huge fan of tequila lime chopped chicken salad, but how can you resist an avocado ranch dressing? It's basically impossible. The same goes for the buffalo ranch dressing in this 5-minute southwest BLT chicken salad.
I would eat salads all day, every day, especially BLT chicken salad, if someone would make them for me—you know, wash and prep all the veggies and mix-ins. But that's not going to happen anytime soon, which is why salad kits get a giant HALLELUJAH from me.
I've been a fan ever since they first hit grocery store shelves. We've tried just about every brand and flavor combination and while most are pretty dang good, I'm not lying when I say Taylor Farms is one of our favorites.
This isn't a sponsored post. For reals. To prove it, I'll also tell you we love Eat Smart salad kits from Costco. The sweet kale one with the poppy seed dressing is one of our all-time favorites. But Taylor Farms recently came out with some new salad kits and I'm totally hooked! They not only make for a lightning-quick side dish but if you throw in a few simple ingredients, they become an easy weeknight meal.
Recently in my Insta stories, I shared how I took the Avocado Ranch salad and kicked it up a notch with a variety of colorful sweet peppers and some diced avocado—simple add-ins that perfectly complimented the creamy cilantro dressing.
This time I took the doctored Taylor Farms salad kit thing a little further by adding diced chicken. And bacon. And tomato. And some baby spinach. The result was a BLT chicken salad loaded with flavor and enough fixings to make it a complete and easy weeknight meal.
And guess what? Everything I added to the Taylor Farms Buffalo Ranch salad kit was something I generally have on hand... except the grilled chicken strips. But those are now a staple in our fridge because you can use them in a ton of easy weeknight meals.
If you want to make prep as easy as possible, pick up an avocado slicer.
Also, you can buy whatever grilled chicken strips you like but my new favorite are the John Soules Foods Rotisserie Seasoned Chicken Breast Strips from Walmart. The seasoning on those strips was spot on for this salad. (A few strips definitely didn't make it into the salad.)
